Amaranth is rich in protein which makes it a great source of energy, once considered a staple in Aztec civilisations. Besides it being naturally gluten free it is a high in micronutrients, antioxidants and fiber.
HOW TO USE AMARANTH:
Those grains are very simple to prepare and can be used in variety of ways. You can try to sprout them and enjoy it on salads, sandwiches and as an extra topping.
To cook amaranth mix it with the water in 3:1 ratio, bring it to boil. Reduce the heat and let it simmer for another 20 min until water will be absorbed.
