Organic red kidney beans and organic quinoa salad

Here at MG Organic Food we believe that you are what you eat and that healthy eating doesn't have to be difficult and time consuming. That's why we want to share with you simple healthy recipes that don't take long to prepare and only consist of few ingredients. 

This organic red kidney beans and organic white quinoa salad is very nutritious, full of plant protein and only takes half an hour to prepare (excluding bean soaking). You can soak the beans ahead, just put them in the water in the evening and they will ready for boiling the next day! 

 Ingredients:
  • 200g of quinoa
  • 50g of red kidney beans
  • Half a can of sweetcorn
  • Dill
  • Organic sunflower seeds to sprinkle
  • Half of a small onion
  • A few black olives
  • A dash of olive oil and freshlu squeezed lemon juice for the dressing.

Method:

  • Soak organic red kidney beans overnight.
  • Boil red kidney beans and quinoa and wait for them to cool down.
  • Chop the onion into small squares.
  • Mix beans, quinoa, onion and sweetcorn together.
  • Put olives on top of the salad, sprinkle with organic sunflower seeds and dill. 
  • Pour olive oil and lemon juice dressing over the salad. Enjoy!
